Jaali is an urdu term used for an ornamental pattern constructed through the use of calligraphy or latticed screen basically something delicate. Jaali is a dough made of almond paste cooked with sugar, stirred constantly till it gets just the right consistency that is neither too hard nor too soft. Now it is kneaded while still hot to form a pliable soft dough.Something akin marzipan . Lot of care is taken in keeping the dough pristine white. This dough is later rolled out and given beautiful shapes and a pattern is carved. This delicate pattern is carved using small tiny penknives which are called ‘’khalam tharash’’which are no longer available….these have been passed down traditionally and are a prized possession of those who own it. Now the base is rolled out with the silver varq stuck with gulab jal sprinkled on it  to support the delicate top layer which is carefully slid on it.The whole process is done with so much of precision without scope of mistakes right from the exact propotion of ingredients to the beautiful geometrical pattern. The edges of the circumference are now artistically carved giving it a complete intricate finish.

The smaller saucer sized jaalis are given along with the famous ‘’Naam ki Jaali’’as a tradition which is basically are big different shaped jaalis be it a basket or a heart or beautiful simple square, rectangle or circle having the names of the bride and the groom carved on them as the couple set forward on their journey ahead.’’Ek meethi shuruwath’’

“The Jaali, is such a beautiful and intricately designed sweet, that should not be eaten, rather framed as a piece of art”
