Gajar ka halwa

Halwa which basically means a sweet mixture and in this case made of Gajjar (carrot ) .Popular all over india but apparently originated during the richness of the mughal era in the north .Grated carrot patiently cooked over low flame along with the richness of khoya,plenty of coarsely ground dry fruits,pure ghee and sugar .Taken off the flame at the right moment just when the aroma starts wafting in the air and the sugar has just about caramalised beautifully.Garnished with chopped nuts,so full of flavor when served hot as it is or with a dollop of ice cream.
